Sang Royal (meaning Royal Bloodî) is a blend of Red ales aged in Cabernet and Port wine barrels for up to 30 months with Cabernet Sauvignon grapes. We start by hand selecting oak barrels with the greatest concentration of red wine character in which to age our Red and double Red ales. After undergoing lactic fermentation for several months, a portion of these Reds are then combined with freshly harvested cabernet sauvignon grapes from the Pacific Northwest to be fermented by the natural yeasts and bacteria on the fruit. The fruited beer is then further aged in red wine barrels for two years to allow the flavors to fully mature. Finally, we blend these barrels with a portion of non-fruited Red ales until the ideal balance of flavors is achieved. Displaying a brilliant acidity, subtle tannic structure and loads of intense flavor and aroma, the 2013 Sang Royal is ready to drink now, but will also reward proper ageing for years to come.
