Ingredients:
Beetroots
Blood Orange
Sesame Oil
Fresh Mint
Red chilli
Berbere spice mix
Soy
Method:
Wrap the beets in tin foil with a little oil and roast for an hour.
Leave to cool, peel and chop, being sure to coat your ceiling and clothing in as much beetroot as possible.
Peel and chop blood orange.
Mix together with diced chilli, fresh mint leaves, sesame oil and berbere.
Add a dash of soy sauce.
Garnish with mint sprigs.
